To act or not to act........
Well I've been debating whether or not to send my Dman to acting classes.
He was the lead in his class play for the Christmas concert this year.
Hubby and I received many compliments on how well he did soooooooo we shall wait and see what may become of this. If this is something he wants to do, I will completely support him in every way possible. :)
Dman's 12th birthday is on Wednesday. I can't believe my baby is almost 12.
Where oh where has the time gone??
Seems just like yesterday he was starting Kindergarten. :(
Take the time to listen to your children daily, love them, talk to them and support them as much as you can, because before you know it they are all grown up.

NKOTBSB to play at Fenway!
Ok so I'm a bit of a NKOTB freak. Always have been since High School.
I am total Donnie Wahlberg girl.... been crushing on him for over 20 years now.
Anyways NKOTB & BSB have joined together in a venture for the 2011 year.
I have got my tickets for their July 9th, 2011 show in Vancouver, debating on spending more big cash for the Sunday show.... hoping to FINALLy get a chance to meet Donnie & get one of his very famous warm & loving hugs! Anyways..... Big news that NKOTBSB is playing Fenway Park.
For those of you who don't follow baseball, Fenway is the stadium that houses the Boston Red Sox. This stadium has been around since 1912 and is THE oldest stadium in The Major League of Baseball.
Ok but why I particularly am blogging about this event is the typo in this article within the first sentence.
I have never LOL'd so loud in my life. .... ok... or is it a typo... my hubby seems to think it was done purposely what ever the case... it is HILL-ARRY!

Loaded Baked Potato Soup
So I made this for dinner tonight!
OMG.... soooooo good...but... it's sooooo not healthy.

Minus the Cajun/ Creole Slap Ya Mama seasoning and the hot sauce.
All out of hot sauce. Was still pretty dang good!
From the Kitchen of Deep South Dish
6 medium sized potatoes, about 1-1/2 pounds
6 slices of bacon, chopped
1/2 cup of unsalted butter
1-1/2 cups of diced onion
1/2 cup of diced celery
2 teaspoons of minced garlic
3/4 cup of all purpose flour
5 cups of chicken stock or broth
1-1/2 cups of milk
1-1/2 cups of half and half
2 teaspoons of salt
6 turns of the pepper grinder
1/2 teaspoon of Slap Ya Mama, or your favorite
Cajun/Creole seasoning, or to taste, optional
Couple dashes of hot sauce
1/3 of a cup of sour cream
1-1/2 cups of shredded sharp cheddar
1/8 cup of sliced green onions
Additional cooked crisp bacon or bacon bits,
for garnish, optional
Additional sliced green onion, for garnish, optional
Dollop of sour cream, for garnish, optional
Preheat oven to 425 degrees F. Scrub the potatoes and prick several times with a fork or the tip of a knife. Bake directly on the oven rack for about 45 minutes, or until tender. Let cool, then peel off just the outer layer of peeling and then cut into chunks. Don't worry if some of the chunks break up - it will only add to the creaminess of the soup base. The potatoes can be baked a day or so in advance and stored in the refrigerator, if desired.
Cook the chopped bacon over medium heat in the bottom of a soup pot until tender, but not crisp. Add the butter and melt; saute the onion and celery with the bacon about 4 minutes, or until softened. Add the garlic; cook another 2 minutes. Sprinkle the flour in, a little at a time, stirring until all of the flour is fully incorporated. Cook over medium heat, stirring constantly about 5 minutes. Bring the heat up to medium high and begin adding the chicken broth a little at a time, stirring constantly, until all of the broth has been incorporated and mixture is smooth. Reduce to a simmer and cook for 15 minutes, stirring several times.
Stir in the milk, half and half, salt, pepper, Cajun seasoning, hot sauce, and potatoes. Increase heat and bring mixture up to just before a boil, then reduce heat to simmer and cook another 15 minutes, stirring several times. Stir in the sour cream, cheese, and green onions and simmer just until cheese has melted and everything is heated through. Garnish individual bowls with a small pinch of shredded cheese, green onion and crumbled bacon.

Welcome 2011.
Happy New Year!
I can't believe it's January 1st, 2011, and the day is almost over.
I've been soooo busy preparing for Christmas & working that I haven't had time to blog.
I also can't believe I haven't said hello at all during the month of December.
Christmas came and passed as did New Years!
Christmas was awesome. We ALL were spoiled which was nice.
It sure was nice having some extra income for Christmas and to help pay the bills.
Good-bye 2010, hello 2011. I have high hopes that 2011 will be an amazing year for me.
I have lots of things that I want to get done this year.
