Well another Christmas has come and gone and I personally couldn't be happier.
I tend to find Christmas very stressful due to lack of money for gifts and 
having to cook for a huge quantity of people most years.
This Christmas I think was hands down THE MOST STRESSFUL EVER!!!
Thankfully I had enough booze to get me through!

Better Than Sex Caketini

Woah... not even sure if this is possible... imagine eating it while in the middle of sex??
LOL!!
I got this recipe again from Snappy Gourmet.

Better Than Sex Caketini
Recipe type: Drink
Author: Snappy Gourmet
Prep time: 5 mins
Total time: 5 mins
Serves: 1
The ever popular Is It Better Thank Sex Cake turned into a cocktail with coconut, pineapple, and French vanilla!
Ingredients
  • 1/4 cup Pinnacle Cake Flavored Vodka
  • 1/4 cup pineapple juice
  • 1/4 cup coconut milk creamer
  • 1 teaspoon French vanilla pudding mix
  • Whipped cream
  • Toasted coconut
Instructions
  1. Mix vodka, pineapple juice, coconut milk creamer, and pudding mix in shaker with ice. Shake for about 30 seconds.
  2. Strain into glass. Top with whipped cream and toasted coconut as desired.
Notes
SNAPPY TIPS: This makes 1 drink, so multiple if you are serving more people.
SNAPPY SUBSTITUTIONS: Instead of French vanilla pudding mix, you could use vanilla. Substitute your favorite coconut milk for the creamer if desired.

Peppermint Brownietini
 
 
Recipe type: Drink
Author: Snappy Gourmet
Prep time: 5 mins
Total time: 5 mins
Serves: 1
A peppermint brownie in cocktail form! Perfect for the holidays!
Ingredients
  • 3 tablespoons chocolate cream liqueur (such as Godiva Original)
  • 2 tablespoons peppermint schnapps(such as Hiram Walker)
  • 2 tablespoons cake flavored vodka (such as Pinnacle)
  • 1 1/2 teaspoons dry brownie cake mix (such as Pillsbury Chocolate Fudge)
  • 1/3 cup milk or cream
  • 1 tablespoon chocolate syrup (such as Hershey’s)
  • 1 tablespoon crushed candy canes
  • Garnish (optional): whipped cream and peppermint candies/candy canes
Instructions
  1. Mix chocolate liqueur, peppermint schnapps, cake flavored vodka, brownie cake mix, and milk/cream shaker with ice. Shake for about 30 seconds.
  2. Dip rim of glass in chocolate syrup then in crushed candy canes. Strain drink into glass. Top drink with whipped cream and candy as desired.
Notes
SNAPPY TIPS: This makes 1 drink, so multiple if you are serving more people.
SNAPPY SUBSTITUTIONS: Instead of brownie mix, you could use a chocolate cake mix or make up your own dry mix.

Spicy Bacon Tater n Corn Chowder Soup.

Ok so I found this recipe sans bacon and taters on my calendar...and thought...hmmm I should give it a try. 
The very first time I made it it was without the bacon and potato...and it was the easier soup I've ever made.
So after that I thought hmmm bacon n taters would be a delicious addition to this recipe and voila!
Enjoy!


Ingredients:

1/2 lb of bacon chopped into little bits
3 medium peeled russet potatoes
1/4c butter
1 small onion chopped
1/2c diced red bell pepper
1/2c diced green bell pepper
1c chicken broth
1c milk
1 16-17 oz can of whole kernal corn, drained, liquid reserved
1/2 tsp cumin
1/4 tsp  cayenne pepper
1/4c all purpose flour
minced cilantro or dried cilantro leaves (optional)

Directions
  • Cook bacon until crispy, add butter, onions, red & green pepper, cumin & cayenne pepper and saute for about 8 minutes until veggies are tender.
  • Add flour and stir for 1 minute. Gradually mix in broth, milk and reserved corn liquid.  Bring mixture to a boil, whisking until smooth.
  • Mix in corn and stir until corn is just heated through. Ladle soup into bowls. Garnish with Cilantro if desired.

Random thoughts going thru my head....

  • HOLY SHITBALLS!!! 8 days until Christmas and I've got hardly anything done! I mean really??  NO BAKING done, Hardly and shopping done & my christmas cards aren't done yet... by the way... if you're getting a card from me this year.... expect it to be LATE!! LOL 
  • I'm always so tired lately
  • Empty coffee cup and WTF I have no money for booze lately... well no money for ANYTHING lately! 
  • Kids are out of school for the next 2 weeks...will I survive? I love having my Monday's to myself. No kids and no hubby to bug the hell out of me.... WHAT AM I GOING TO DO??? lol
  • So not looking forward to the clean up of Christmas dinner of 15 at my house this year. WHAT?? 
  • Anyone have a about $3 million to spare? I'd love to live in Vancouver... but I can't afford it.. I think a nice 3 bedroom condo downtown would be supreme... lol... and to have all my bills paid off with a lil extra money put aside for my kids college education because we all know those aren't cheap. Not much to ask for is it? 
  • Ewww do I really have to clean the bathrooms today... I mean really?? Boys are messy and well so is the hubby... blech... 
  • Ohhh can I trade my hubby in for a happier, healthier & wealthier model?
  • And last but not least... I LOVE SNOWMEN DECOR!!! :D Weeeeeee!!!
Ok... think I've had said enough for now.... about to create my Christmas Photo Cards... and yes I said Christmas... because.... this is what it is all about for ME and my family!! Not Happy Holidays...etc!

It's a baking kinda day.

Having one of those blah moments.... feeling down.
Sooo I think I will turn on the Christmas music and start my Christmas baking to help me feel better.
So what will I be baking today?  Well I'm starting off with this recipe Ginger Molasses Cookies to chill 3 hours while I make a chocolately crispy cookie treat that is a big hit in the house.
 I'll blog that recipe too when I get a chance.
Usually Christmas is a cheerful time in the house, but for some reason it just doesn't feel like Christmas to me.
Ok off to bake... will post pix of my accomplishments today later.

I can't believe it's seriously freaken..... DECEMBER?!?!?!

Where the hell has the time gone??
I mean it just seems like it was the summer and NOW......its already time for Christmas?
Christmas parties, shopping all the fun stuff that I have yet to be included in.
HAHAHA... I am so not ready for Christmas... can't you tell?? Good thing there's still 20 days left or my kids would be calling me the GRINCH..... lol... maybe I'll eventually get into the Holiday Spirit... but it's too hard for me right now.  I guess I better get my butt in gear for our annual family photo, and turn it into a photo card & get my Christmas cards done too. Ohh sweet nibblets... I still have to think about holiday baking too??
GOOD LORD... someone throw me a life line.... lol...
Ok... time to get on with my day etc...

Thanksgiving, Moving... life....

So I can't believe we just celebrated another Thanksgiving.
On Sunday my brother so graciously cooked dinner for 15 at his house which was a nice change.
My mom and I usually do all the cooking for the holidays so when last Christmas & this Thanksgiving came where my brother volunteered my mom and I were stoked. She still cooked a ham & brought some salads.
And I made the stuffing and some very delish Pumpkin Cream Cheese Cupcakes in which I will share the recipe with you real soon!  
SO Happpy Belated Thanksgiving Canada!!!!
Wow....one never knows how much JUNK they collect until it is time to move.
Mind you I didn't move that far just upstairs from a basement suite to the top floor of the same house, but man.... we didn't hire movers although my parents were a big help, but it took me a week in between working, have a sick hubby then him going back to work to get moved just upstairs. Whew... well now that is all done, it's time to go through the little stuff and be rid of junk.  I will not hold on to so much stuff anymore.
 No I was not a contender for the TV Show Hoarders Burried Alive but maybe more along the lines of being a Contender for TV Show called Consumed which is shot locally in The Greater Vancouver / Fraser Valley areas.
Today while taking a break I sat down to watch Consumed with my mom, and she's all freaking out... OMG OMG.... That's Nikki, she's my friend from Church.... Didn't see the whole episode...but the lady who was on Consumed today belongs to the same church as my parents. And my mom said she had given this lady a bag full of clothes.  One person's junk is another person's treasure... but how can you truly treasure ANYTHING when you are digging yourself a hole in which is very hard to get out of. 
This short move sure opened my eyes.... LESS IS MORE!
So I will no longer be accepting useless toys for my kids, furniture, clothes no one will ever wear or anymore clutter to fill up my home and make my life a mizzy hell.  
I'm sad to say I didn't think I was one of  THOSE people... but yet I was.
This moving chapter is now closed and I'm moving on from collecting clutter!
So with this Thanksgiving & move come and gone... 
I am THANKFUL to catch up on some well needed beauty sleep!

Oatmeal Pnut Butter Choccie Chip Cookies

Oatmeal Pnut Butter Choccie Chip Cookies


Ingredients:
  • 1/2 cup butter
  • 1/2 cup peanut butter
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 2 1/2 cups quick cooking oats
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 1/2 cups chocolate chips
  • 1/2 cup chopped nuts, optional
Directions:
  1. Cream together butter pnutbutter and sugar.
  2. Beat in eggs and vanilla.
  3. Add flour, oatmeal, baking soda,  salt and mix until well blended.
  4. Stir in choccie chips (and nuts).
  5. Drop dough in large spoonfuls onto a cookie sheet.
  6. Flatten spoonful slightly.
  7. Bake at 350°F for 10-12 minutes.

Upper Sumas Elementary Fall Country Concert ( Abbotsford, BC )

My kids's school is having a fall country concert fundraiser.
It's Friday September 23rd, 2011 from 5:30pm - 8:30pm.
$15.00 per ticket for adults and $10.00 per ticket per child.
Tickets include a BBQ dinner.
Along with some great country music singers there will be a bake sale, and a cake walk.

Abbotsford AirShow Weekend

It's that time of the year again for us Abby people.
Sights and sounds of many planes flying around our beautiful city.
Sadly in the 19 years I've lived here... I've NEVER gone to see the actual show at the airport.
I love watching the planes from my home....now I know we don't get to see all the great show they put.
So here's a pic I snapped yesterday while out picking blackberries with Eman.

3 children left behind with NO PARENTS and 2 of the 3 kids are paralyzed from this accident.

I finally got to meet my celebrity crush of 21 years! Woooo hoooo!!
It was hard to blog in the moment as I had no computer access and then came home to have to work.
So HOPEFULLY I will have it up in the next few days.

♥ This Is My Vancouver ♥

So before the Vancouver Riots even happened, I had a trip planned to Vancouver for my kids and I.
I thought screw it, I'm going to take the kids anyways. With all the negative press that Vancouver has been getting over some stupid morons, I thought now would be a great time to show my kids just what Vancouver is all about.... but I didn't realize how close the condo we were staying in was to the scene of the riots.
So we got to the 32nd floor of this building on Granville Street and looked out the hallway window and it struck me. 36 hours before we arrived the streets were jam packed with people and lots of rioting fools.
My kids and I were beside ourselves just thinking about what happened and how close this building was to the crazy chaos.  Now being that my kids were born and raised in Abbotsford they are not used to the big city.
When we come to Vancouver as a family it's usually to go to the PNE or Stanley Park in the summer.
They've never really got to experience downtown Vancity.
And I'm so happy that they saw the REAL Vancouver where people were happy, smiling, cheering, dancing and having fun in the streets. NOT what they've been seeing on TV the past week.

Abbotsford LOVES the Canucks

Ok so I came across this video while on twitter this evening!
This was the main street of my city of Abbotsford tonight after the Canucks won round 3 against the San Jose Sharks! Yeahhh baby... Stanley Cup Finals.... wooooo 17 years to the DAY was when the Canucks were LAST the Western Conference Champs! Both times the Canucks won in Double Over time!!
