Oatmeal Pumpkin Spiced Pancakes

This recipe has no pumpkin in it, but has the pumpkin spices.
The original recipe didn't call for oatmeal or the spices.

1 1/2 cups flour
1/2 c quick oats
2 teaspoons baking powder
2 tablespoons sugar (optional)
3/4 teaspoon salt
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp nutmeg
1/2 tsp ground ginger
1 1/2 cups milk
1 egg
2 - 3 tablespoons oil
1/2 tsp vanilla

Mix all of the dry ingredients together, then add the milk, vanilla, oil and eggs. Mix well.
Try to get some of the lumps out of the batter. Don't worry about making it perfectly smooth.

Heat a skillet on medium heat. When heated, scoop the pancake batter recipe into the frying pan with a large spoon to make individual pancakes.

You can substitute Wheat Flour for White Flour or do a 50 - 50 mix.

I thought this would be a pretty cool idea for a school fundraiser but use mini cupcakes instead.

Apple Butternut Squash Soup

Apple Butternut Squash Soup

Ingredients:

2 Tbsp. olive oil
2 butternut squash (2 lb./900 g each), peeled, seeded and cut into chunks
3-4 medium Gala Apples or Apples of your choice.
1 onion, chopped
2 clove garlic, minced
1 tsp. Ground AllSpice
1 tsp. Ground Cinnamon
20 fl oz/600 mL each sodium reduce chicken broth
1/2 cup light sour cream, divided

Directions:

Add all ingredients in a baking pan and bake at 350F for 30 minutes or until squash is tender.

Add in batches, to food processor; or blender and process until smooth. Place in saucepan; cook until heated through, stirring occasionally.

Spoon soup into bowls. Add 1 Tbsp. sour cream to each; swirl gently with spoon.

NOTE:

For a thinner soup, add more chicken broth or some water until of desired consistency.

CHILLED BUTTERNUT SQUASH SOUP
Prepared as directed; cool. Refrigerate in airtight container until ready to serve.

Omit apples if you just want the Butternut Squash taste..

Upper Sumas Elementary School Fundraising.

Ok so Upper Sumas Elementary School is needing some serious fundraising this year.
Their computer lab was updated and now owes some serious money to the Abbotsford School District.
I was wondering if there was anyone in the Abbotsford, BC area is able to help out the school.
There is a Fall Country Concert being held next Friday September 24th, from 6-9pm. Tickets for kids ages 2-12 are $10.00 each & tickets for adults are $15.00 each. A BBQ dinner is included with your ticket. If you would like to purchase any tickets from me, please let me know by posting a comment here and we can make arrangements. 2 of the names at this Fall Country Concert are Kristal Barrett and Stephanie Spence.. & some more actsas well although I'm not sure on all those details yet.
~ Any help would greatly be appreciated.
