Magic Swirl Chip Bars

Found this recipe on the bag of swirled milk & white chocolate chips by President's Choice.

These chips are deeeeeeeeelish!

Next stop to the store I will be buying the ingredients I need to make these bars,

if I don't eat up all the chips first lol

Ingredients:

1 1/2 c of Honey Graham Crumbs

1/3 c of Melted Butter

1c coarsely chopped pecan halves

1c sweetened shredded coconut

1 can of sweetened condensed milk

1/2 c decadent swirled chips

Directions:

1. Preheat oven to 350F (180C)

2. Combine 1 1/2c (375 mL) of honey graham crumbs with 1/3c (75mL) of melted butter.

3. Pat into 8 - inch square metal pan.

4. Sprinkle with 1 c (250 mL) each of coarsely chopped pecan halves

and sweetened shredded coconut.

5. Pour 1 can of sweetened condensed milk evenly over top. Bake in lower third of preheated 350F (180C) oven for 25-27 minutes or until golden.

6. Sprinkle with 1/2c (125 mL) Decadent Swirled Chips, bake 4 minutes longer.

7. Cook in pan on rack completely about 3 hours, before cutting into squares.

Makes 20 squares

Ultimate Butter Tarts

This recipe is mainly for me to come back and give a try when I get a chance.

Again found on the back of a Golden Crisco Box.

But hey... give it a whirl too!

Ingredients:

Tart Shells:

2c (500 mL) All purpose flour

1 tsp (5mL) salt

3/4c (175mL) Crisco Golden All Vegetable Shortening Well chilled

4-8 Tbsp (60-120mL) ice cold water

Filling:

1/2c (125 mL) packed brown sugar

1/2c ( 125mL) corn syrup

1/4c (50mL) butter or golden crisco

1 egg slightly beaten

1 tsp (5mL) Vanilla Extract

1/2 tsp ( 2mL) salt

3/4c (175mL) raisins

Directions:

Shells:

1. Blend flour and salt in medium mixing bowl. Cut 1/2 inch (1.5cm) cubes of chilled crisco or butter into flour mixture using a pastry blender or 2 knives until mixture resembles coarse crumbs with pea sized pieces remaining.

2. Sprinkle 4 tbsp (60mL) of the ice cold water over the flour mixture. Using a fork, stirl and draw the flour from the bottom of the top; press chunks down to bottom of bowl with fork. Add more water by the tablespoon, mixing until dough holds together.

3. Divide dough into 2 balls. Flatten balls into 1/2 inch (1.5cm) thick disks, wrap in plastic wrap and chill for 30 mintues or up to 2 days.

4. Place ball of dough on lightly floured work surface. With floured rolling pin, roll out thinly from the centre outward. Cut into 6 round with 4 " (10cm) cutter. Repeat with 2nd ball of dough.

Fit rounds into 12 medium sized muffin cups.

Filling:

5. Preheat oven to 425F (220c)

6. Combine all filling ingredients except raisins; mix well.

7. Put raisins into pastry shells. dividing evenly.

8. Fill cups 2/3 full with syrup mixture.

9. Bake on bottom shelf at 425F (220c) for 12-15 minutes or just until set.

DO NOT OVER BAKE!!!!

Cool completely before removing from pan.

Makes 12 butter tarts.

Oatmeal Chocolate Chip Cookies

So I found this chocolate chip cookie recipe on a box of Golden Crisco!

I tried it and was the best cookie I've ever made!

I made couple substitions, though.

I used less sugar, added some oatmeal and ..OOooops.... didn't have pecans.

Oatmeal Chocolate Chip Cookies

Ingredients:

3/4c butter, or margarine, or golden crisco

1 1/4 c brown sugar ( I only used 1c)

1 Egg

2 Tbsp Milk

1 Tbsp Vanilla Extract

1 3/4 c All purpose Flour

1/2c oats

1 tsp salt

3/4 tsp baking soda

1 c semi-sweet chocolate chips

1c coursely chopped pecans

Directions:

1. Preheat oven to 375F (190C)

2. Cream shortening ( or margarine /butter) and brown sugar in a large bowl at medium speed of electric mixer for 2 minutes or until light & fluffy.

3 Add egg, milk, and Vanilla beating 1 minute or until thoroughly blended.

4. Combine flour, salt and baking soda in a medium bowl. ( Oats is using as well )

Add to creamed mixture gradually, beating on low for 1 minute or until just blended.

5. Stir in semi-sweet chocolate chips & pecans.

6. Drop by heaping spoonfuls (2 tbsp/30 mL) on ungreased baking sheet leaving about

3 inches (7cm) between cookies.

7. Bake at 375F (190C) for 8-10 minutes for soft cookies
(cookies will still appear moist when baked - DO NOT OVER BAKE) or 11 to 13 minutes for crunchier cookies. Cool in pan for 2 minutes then remove to cooking rack.

No picture has been taken yet...but next batch I make I will add it.

Well another Christmas has come and gone and I personally couldn't be happier.

I tend to find Christmas very stressful due to lack of money for gifts and

having to cook for a huge quantity of people most years.

This Christmas I think was hands down THE MOST STRESSFUL EVER!!!

Thankfully I had enough booze to get me through!

I got this recipe again from Snappy Gourmet.

Better Than Sex Caketini

Recipe type: Drink

Author: Snappy Gourmet

Prep time: 5 mins

Total time: 5 mins

Serves: 1

The ever popular Is It Better Thank Sex Cake turned into a cocktail with coconut, pineapple, and French vanilla!

Ingredients

1/4 cup Pinnacle Cake Flavored Vodka
1/4 cup pineapple juice
1/4 cup coconut milk creamer
1 teaspoon French vanilla pudding mix
Whipped cream
Toasted coconut

Instructions

Mix vodka, pineapple juice, coconut milk creamer, and pudding mix in shaker with ice. Shake for about 30 seconds.
Strain into glass. Top with whipped cream and toasted coconut as desired.

Notes

SNAPPY TIPS: This makes 1 drink, so multiple if you are serving more people.

SNAPPY SUBSTITUTIONS: Instead of French vanilla pudding mix, you could use vanilla. Substitute your favorite coconut milk for the creamer if desired.

Peppermint Brownietini

Recipe type: Drink

Author: Snappy Gourmet

Prep time: 5 mins

Total time: 5 mins

Serves: 1

A peppermint brownie in cocktail form! Perfect for the holidays!

Ingredients

3 tablespoons chocolate cream liqueur (such as Godiva Original)
2 tablespoons peppermint schnapps(such as Hiram Walker)
2 tablespoons cake flavored vodka (such as Pinnacle)
1 1/2 teaspoons dry brownie cake mix (such as Pillsbury Chocolate Fudge)
1/3 cup milk or cream
1 tablespoon chocolate syrup (such as Hershey’s)
1 tablespoon crushed candy canes
Garnish (optional): whipped cream and peppermint candies/candy canes

Instructions

Mix chocolate liqueur, peppermint schnapps, cake flavored vodka, brownie cake mix, and milk/cream shaker with ice. Shake for about 30 seconds.
Dip rim of glass in chocolate syrup then in crushed candy canes. Strain drink into glass. Top drink with whipped cream and candy as desired.

Notes

Spicy Bacon Tater n Corn Chowder Soup.

Ok so I found this recipe sans bacon and taters on my calendar...and thought...hmmm I should give it a try.

The very first time I made it it was without the bacon and potato...and it was the easier soup I've ever made.

So after that I thought hmmm bacon n taters would be a delicious addition to this recipe and voila!

Enjoy!

Ingredients:

1/2 lb of bacon chopped into little bits
3 medium peeled russet potatoes
1/4c butter
1 small onion chopped
1/2c diced red bell pepper
1/2c diced green bell pepper
1c chicken broth
1c milk
1 16-17 oz can of whole kernal corn, drained, liquid reserved
1/2 tsp cumin
1/4 tsp cayenne pepper
1/4c all purpose flour
minced cilantro or dried cilantro leaves (optional)

Directions

Cook bacon until crispy, add butter, onions, red & green pepper, cumin & cayenne pepper and saute for about 8 minutes until veggies are tender.
Add flour and stir for 1 minute. Gradually mix in broth, milk and reserved corn liquid. Bring mixture to a boil, whisking until smooth.
Mix in corn and stir until corn is just heated through. Ladle soup into bowls. Garnish with Cilantro if desired.

HOLY SHITBALLS!!! 8 days until Christmas and I've got hardly anything done! I mean really?? NO BAKING done, Hardly and shopping done & my christmas cards aren't done yet... by the way... if you're getting a card from me this year.... expect it to be LATE!! LOL
I'm always so tired lately
Empty coffee cup and WTF I have no money for booze lately... well no money for ANYTHING lately!
Kids are out of school for the next 2 weeks...will I survive? I love having my Monday's to myself. No kids and no hubby to bug the hell out of me.... WHAT AM I GOING TO DO??? lol
So not looking forward to the clean up of Christmas dinner of 15 at my house this year. WHAT??
Anyone have a about $3 million to spare? I'd love to live in Vancouver... but I can't afford it.. I think a nice 3 bedroom condo downtown would be supreme... lol... and to have all my bills paid off with a lil extra money put aside for my kids college education because we all know those aren't cheap. Not much to ask for is it?
Ewww do I really have to clean the bathrooms today... I mean really?? Boys are messy and well so is the hubby... blech...
Ohhh can I trade my hubby in for a happier, healthier & wealthier model?
And last but not least... I LOVE SNOWMEN DECOR!!! :D Weeeeeee!!!

Ok... think I've had said enough for now.... about to create my Christmas Photo Cards... and yes I said Christmas... because.... this is what it is all about for ME and my family!! Not Happy Holidays...etc!

It's a baking kinda day.

Having one of those blah moments.... feeling down.

Sooo I think I will turn on the Christmas music and start my Christmas baking to help me feel better.

So what will I be baking today? Well I'm starting off with this recipe Ginger Molasses Cookies to chill 3 hours while I make a chocolately crispy cookie treat that is a big hit in the house.
I'll blog that recipe too when I get a chance.
Usually Christmas is a cheerful time in the house, but for some reason it just doesn't feel like Christmas to me.
Ok off to bake... will post pix of my accomplishments today later.

I mean it just seems like it was the summer and NOW......its already time for Christmas?

Christmas parties, shopping all the fun stuff that I have yet to be included in.

HAHAHA... I am so not ready for Christmas... can't you tell?? Good thing there's still 20 days left or my kids would be calling me the GRINCH..... lol... maybe I'll eventually get into the Holiday Spirit... but it's too hard for me right now. I guess I better get my butt in gear for our annual family photo, and turn it into a photo card & get my Christmas cards done too. Ohh sweet nibblets... I still have to think about holiday baking too??

GOOD LORD... someone throw me a life line.... lol...

Thanksgiving, Moving... life....

So I can't believe we just celebrated another Thanksgiving.

On Sunday my brother so graciously cooked dinner for 15 at his house which was a nice change.

My mom and I usually do all the cooking for the holidays so when last Christmas & this Thanksgiving came where my brother volunteered my mom and I were stoked. She still cooked a ham & brought some salads.

And I made the stuffing and some very delish Pumpkin Cream Cheese Cupcakes in which I will share the recipe with you real soon!

SO Happpy Belated Thanksgiving Canada!!!!

Wow....one never knows how much JUNK they collect until it is time to move.

Mind you I didn't move that far just upstairs from a basement suite to the top floor of the same house, but man.... we didn't hire movers although my parents were a big help, but it took me a week in between working, have a sick hubby then him going back to work to get moved just upstairs. Whew... well now that is all done, it's time to go through the little stuff and be rid of junk. I will not hold on to so much stuff anymore.

No I was not a contender for the TV Show Hoarders Burried Alive but maybe more along the lines of being a Contender for TV Show called Consumed which is shot locally in The Greater Vancouver / Fraser Valley areas.

Today while taking a break I sat down to watch Consumed with my mom, and she's all freaking out... OMG OMG.... That's Nikki, she's my friend from Church.... Didn't see the whole episode...but the lady who was on Consumed today belongs to the same church as my parents. And my mom said she had given this lady a bag full of clothes. One person's junk is another person's treasure... but how can you truly treasure ANYTHING when you are digging yourself a hole in which is very hard to get out of.

This short move sure opened my eyes.... LESS IS MORE!

So I will no longer be accepting useless toys for my kids, furniture, clothes no one will ever wear or anymore clutter to fill up my home and make my life a mizzy hell.

I'm sad to say I didn't think I was one of THOSE people... but yet I was.

This moving chapter is now closed and I'm moving on from collecting clutter!

So with this Thanksgiving & move come and gone...

I am THANKFUL to catch up on some well needed beauty sleep!

Oatmeal Pnut Butter Choccie Chip Cookies

Oatmeal Pnut Butter Choccie Chip Cookies

Ingredients:

1/2 cup butter
1/2 cup peanut butter
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
2 1/2 cups quick cooking oats
2 teaspoons baking soda
1 teaspoon salt
1 1/2 cups chocolate chips
1/2 cup chopped nuts, optional

Directions:

Cream together butter pnutbutter and sugar.
Beat in eggs and vanilla.
Add flour, oatmeal, baking soda, salt and mix until well blended.
Stir in choccie chips (and nuts).
Drop dough in large spoonfuls onto a cookie sheet.
Flatten spoonful slightly.
Bake at 350°F for 10-12 minutes.

Upper Sumas Elementary Fall Country Concert ( Abbotsford, BC )

My kids's school is having a fall country concert fundraiser.

It's Friday September 23rd, 2011 from 5:30pm - 8:30pm.

$15.00 per ticket for adults and $10.00 per ticket per child.
Tickets include a BBQ dinner.
Along with some great country music singers there will be a bake sale, and a cake walk.

Abbotsford AirShow Weekend

It's that time of the year again for us Abby people.

Sights and sounds of many planes flying around our beautiful city.

Sadly in the 19 years I've lived here... I've NEVER gone to see the actual show at the airport.

I love watching the planes from my home....now I know we don't get to see all the great show they put.

So here's a pic I snapped yesterday while out picking blackberries with Eman.

It was hard to blog in the moment as I had no computer access and then came home to have to work.

♥ This Is My Vancouver ♥

So before the Vancouver Riots even happened, I had a trip planned to Vancouver for my kids and I.

I thought screw it, I'm going to take the kids anyways. With all the negative press that Vancouver has been getting over some stupid morons, I thought now would be a great time to show my kids just what Vancouver is all about.... but I didn't realize how close the condo we were staying in was to the scene of the riots.

So we got to the 32nd floor of this building on Granville Street and looked out the hallway window and it struck me. 36 hours before we arrived the streets were jam packed with people and lots of rioting fools.

My kids and I were beside ourselves just thinking about what happened and how close this building was to the crazy chaos. Now being that my kids were born and raised in Abbotsford they are not used to the big city.

When we come to Vancouver as a family it's usually to go to the PNE or Stanley Park in the summer.

They've never really got to experience downtown Vancity.

And I'm so happy that they saw the REAL Vancouver where people were happy, smiling, cheering, dancing and having fun in the streets. NOT what they've been seeing on TV the past week.

This was the main street of my city of Abbotsford tonight after the Canucks won round 3 against the San Jose Sharks! Yeahhh baby... Stanley Cup Finals.... wooooo 17 years to the DAY was when the Canucks were LAST the Western Conference Champs! Both times the Canucks won in Double Over time!!

Since when does supporting your favourite sports teams results in getting you black listed from local pub establishments in San Jose? (Or anywhere for that matter?)

If people can't get along with others who don't think the same as them they need a reality check and a good swift kick in the ass. I mean sure we are allowed to disagree with everyone's choice of teams and have a lil fun ribbing other fans without going over a poor sports line, but not allowing people in an establishment due to wearing sports attire that does not support your local team is a pretty DAMN GOOD reason for other tourists to BOYCOTT your ass!!

Canucks take game 4 Baby! - Canucks vs Sharks.

We've now finished game 4 of the Canucks 3rd series.

So Canucks have a 3 game to 1 advantage over the San Jose Sharks.

One more win and we're in the finals baby.

Over twitter today it was announced 17 years ago on the Tuesday May 24th, that the Canucks won their 3rd series against The Toronto MapleLeafs, while moving on to the FINALs where they lost in game 7 against the New York Rangers.

So hopefully my Canucks can wrap up THIS series 17 years later on the same date!

Poor Sick Kid

Yesterday morning I was awoken at 5am by my 8 year old son saying I feel sick mommy.

I told him to go back to bed and eveything would be fine.

Not knowing he had already puked EVERYWHERE throughout the house.

Sooo I laid in bed for a few minutes....and thought... Ohh shiz.... I better get up...

Well I got up to find he had puked all over his bed, his floor, the kitchen floor, and the family room.

Woah this is NOT a great way to wake up to on a Sunday early morning.

So I got every thing cleaned up... got him situated on the couch with blankets and a couple barf buckets.

And what does he do?? Misses the buckets completely gets it all over the blankets, carpet & couch.

UGH!!! I do NOT respond well to bad smells... sooo I start gagging myself saying I can do this I can do this.

This kid had super puke powers or something!! He ended up puking the entire day long and well in the end...

I had to do more laundry since he was getting sick from both ENDS! Poor Kid!!

I spent all day doing laundry from his puking and pooping!

I'm actually surprised no one had to clean up MY PUKE from the stench in the air.

THANK GOD FOR MY SCENTSY WAX & WARMER!!

He's still not doing the greatest....kept him home from school today and he's been watching movies, drinking gatorade and water. No actual food as of yet..but he's able to keep the liquid down for now.

This is the nastiest bug I have EVER encountered and I hope I NEVER have to encounter it again!

Hope my baby gets better soon.

It breaks my heart seeing him like this, so lethargic.....

because this kid has more energy than the freaken energizing bunny!!

I'm beginning to dread this whole Valentine's Day idea and it's not because I'm single.

Because I'm not. in fact I have been with my hubby for 16 wonderful & trying years.

LOL yes it isn't always a piece of cake our relationship, but really... whose is?

Ok so I'm dreading this one day a year to show the person you love how much you love them in one day.

Real Reasons to Avoid Baby Carrots. » Evolution Green

I've heard something similar in the past that the carrots were soaked in some sort of chemical but wasn't too sure. But one my former trainers from Curves posted this on her Facebook Page.

I rarely bought these carrots and I will no longer even think about buying them.

Seriously what is wrong with the people in Charge of regulating our food.

I mean know we use chlorine in our drinking water to kill bacteria and microbes.

I am just wondering how much chlorine they use in the solution soaking the carrots.

These food manufacturers are slowly trying to kill us all.

Well I've been debating whether or not to send my Dman to acting classes.

He was the lead in his class play for the Christmas concert this year.

Hubby and I received many compliments on how well he did soooooooo we shall wait and see what may become of this. If this is something he wants to do, I will completely support him in every way possible. :)

Dman's 12th birthday is on Wednesday. I can't believe my baby is almost 12.

Where oh where has the time gone??

Seems just like yesterday he was starting Kindergarten. :(

Take the time to listen to your children daily, love them, talk to them and support them as much as you can, because before you know it they are all grown up.

Ok so I'm a bit of a NKOTB freak. Always have been since High School.

I am total Donnie Wahlberg girl.... been crushing on him for over 20 years now.

Anyways NKOTB & BSB have joined together in a venture for the 2011 year.

I have got my tickets for their July 9th, 2011 show in Vancouver, debating on spending more big cash for the Sunday show.... hoping to FINALLy get a chance to meet Donnie & get one of his very famous warm & loving hugs! Anyways..... Big news that NKOTBSB is playing Fenway Park.

For those of you who don't follow baseball, Fenway is the stadium that houses the Boston Red Sox. This stadium has been around since 1912 and is THE oldest stadium in The Major League of Baseball.

Ok but why I particularly am blogging about this event is the typo in this article within the first sentence.

I have never LOL'd so loud in my life. .... ok... or is it a typo... my hubby seems to think it was done purposely what ever the case... it is HILL-ARRY!

Loaded Baked Potato Soup

Deep South Dish: Loaded Baked Potato Soup

So I made this for dinner tonight!
OMG.... soooooo good...but... it's sooooo not healthy.

Minus the Cajun/ Creole Slap Ya Mama seasoning and the hot sauce.

All out of hot sauce. Was still pretty dang good!

Loaded Baked Potato Soup

From the Kitchen of Deep South Dish
6 medium sized potatoes, about 1-1/2 pounds
6 slices of bacon, chopped
1/2 cup of unsalted butter
1-1/2 cups of diced onion
1/2 cup of diced celery
2 teaspoons of minced garlic
3/4 cup of all purpose flour
5 cups of chicken stock or broth
1-1/2 cups of milk
1-1/2 cups of half and half
2 teaspoons of salt
6 turns of the pepper grinder
1/2 teaspoon of Slap Ya Mama, or your favorite
Cajun/Creole seasoning, or to taste, optional
Couple dashes of hot sauce
1/3 of a cup of sour cream
1-1/2 cups of shredded sharp cheddar
1/8 cup of sliced green onions
Additional cooked crisp bacon or bacon bits,
for garnish, optional
Additional sliced green onion, for garnish, optional
Dollop of sour cream, for garnish, optional

Preheat oven to 425 degrees F. Scrub the potatoes and prick several times with a fork or the tip of a knife. Bake directly on the oven rack for about 45 minutes, or until tender. Let cool, then peel off just the outer layer of peeling and then cut into chunks. Don't worry if some of the chunks break up - it will only add to the creaminess of the soup base. The potatoes can be baked a day or so in advance and stored in the refrigerator, if desired.

Cook the chopped bacon over medium heat in the bottom of a soup pot until tender, but not crisp. Add the butter and melt; saute the onion and celery with the bacon about 4 minutes, or until softened. Add the garlic; cook another 2 minutes. Sprinkle the flour in, a little at a time, stirring until all of the flour is fully incorporated. Cook over medium heat, stirring constantly about 5 minutes. Bring the heat up to medium high and begin adding the chicken broth a little at a time, stirring constantly, until all of the broth has been incorporated and mixture is smooth. Reduce to a simmer and cook for 15 minutes, stirring several times.

Stir in the milk, half and half, salt, pepper, Cajun seasoning, hot sauce, and potatoes. Increase heat and bring mixture up to just before a boil, then reduce heat to simmer and cook another 15 minutes, stirring several times. Stir in the sour cream, cheese, and green onions and simmer just until cheese has melted and everything is heated through. Garnish individual bowls with a small pinch of shredded cheese, green onion and crumbled bacon.

Happy New Year!

I can't believe it's January 1st, 2011, and the day is almost over.

I've been soooo busy preparing for Christmas & working that I haven't had time to blog.

I also can't believe I haven't said hello at all during the month of December.

Christmas came and passed as did New Years!

Christmas was awesome. We ALL were spoiled which was nice.

It sure was nice having some extra income for Christmas and to help pay the bills.

Good-bye 2010, hello 2011. I have high hopes that 2011 will be an amazing year for me.

I have lots of things that I want to get done this year.

I've been on Twitter for about 19 months now and I really enjoy the people I follow.

I follow BH's ( BlockHeads = NKOTB fans) I follow Vancouverites, I Follow Canucks & some other NHL Hockey Fans. Only if they aren't rude about my Canucks. lol...

I also follow Abbotsfordians, Special Needs info like Austim, Aspergers, and Sensory Processing Disorder.

Well in the past 6 months I have won many contests over Twitter. A few prizes I've had to decline such as theatre tickets and event tickets. But the prizes I've been able to claim have been awesome. A Canucks Shirt from Sports Action Lottery, Canucks Open Practice Tickets which I took my oldest boy to on October 3rd. And I also won 2 tix to Fright Nights at the Playland. So hubby and I bought 2 more tix and went Thursday October 21st, with the kiddos as Friday was a professional day. I talked to many people over Twitter saying it was really scary and I shouldn't take my kids which made me rethink this whole thing. Well we did it anyways... took our boys and didn't regret a thing except the rain and the fact that I didn't realize that Friday was a PROVINCE WIDE Pro D Day so Fright Nights was busier than a mall at Christmas time. WOAH!! The line ups for the available rides were rediculous but not nearly as horrendous as the line ups to the Haunted Houses. INSANE!! No cameras allowed inside the Haunted Houses either. But seriously we waited 40 minutes for one Haunted house just to get to the initial starting area for the line ups and they closed the house down due to too many people.
Having a special needs son who doesn't do well with line ups and having to wait was rough too. He had a sh*t fit and tried to run away on us. So after a couple rides we decided to try another Haunted House line up...it wasn't nearly as long, it was long enough but it sure moved pretty darn fast. I had a couple young girls I'd guess 18-22 years old behind me pushing me & hitting me with their umbrellas and I was getting pissed off... but I kept my cool.. and stood their and made them wait longer when we had to move... lol... well anyways they ended up being in the haunted house with my family and were screaming like little babies... my kids were laughing at them. My kids are 7 & 11 and weren't scared one bit in this haunted house and laughed sooooo hard at these older girls who ran to catch up to us.... lol... Karma... love it... lol...

Oatmeal Pumpkin Spiced Pancakes

This recipe has no pumpkin in it, but has the pumpkin spices.

The original recipe didn't call for oatmeal or the spices.

1 1/2 cups flour

1/2 c quick oats

2 teaspoons baking powder

2 tablespoons sugar (optional)

3/4 teaspoon salt

1 tsp cinnamon

1/2 tsp ground cloves

1/2 tsp nutmeg

1/2 tsp ground ginger

1 1/2 cups milk

1 egg

2 - 3 tablespoons oil

1/2 tsp vanilla

Mix all of the dry ingredients together, then add the milk, vanilla, oil and eggs. Mix well.
Try to get some of the lumps out of the batter. Don't worry about making it perfectly smooth.

Heat a skillet on medium heat. When heated, scoop the pancake batter recipe into the frying pan with a large spoon to make individual pancakes.

You can substitute Wheat Flour for White Flour or do a 50 - 50 mix.
